These oat yogurt flatbreads are a delicious and healthy alternative to pizza, combining the nutty flavor of oats with creamy yogurt.

- 150 g Mozzarella, grated
- 100 g Goat cheese
- 4 tbsp Tomato paste or Passata
- 3 tbsp Pesto
- 4 tbsp Crème fraîche
- 100 g Smoked salmon
- Fresh basil
- Cherry tomatoes, halved
- Arugula
- Avocado slices
- 150 g Oats (for flour)
- 1 tsp Baking powder
- a pinch Salt
- 150 g Yogurt
- 1 piece Egg
- Grind the oats in a blender to flour. This takes about 2 minutes until the oats reach a fine, flour-like consistency.
- In a large bowl, mix the oat flour, baking powder, salt, and optional herbs of your choice. Ensure all dry ingredients are well combined.
- Add the yogurt and one egg and stir everything well until a homogeneous dough forms. This takes about 1-2 minutes.
- Let the dough rest for 2-3 minutes. During this time, you can preheat the pan over medium heat.
- Divide the dough into 4 portions and roll each portion out on a lightly floured surface until about 1 cm thick.
- Add some oil to the hot pan and fry the flatbreads one by one until golden brown. This takes about 2-3 minutes per side. Be careful not to burn them!
- Keep the finished flatbreads warm while frying the remaining flatbreads. They should be slightly crispy and golden brown.
- Top the flatbreads as desired and serve immediately. It's best to enjoy them warm so the cheese melts and the flavors develop.
